A Rich History for Macaroons
The French macaroon – also known as the macaron – gains its origins from the Italian maccarone or maccherone. It’s a close cousin to amaretto and the word itself comes from ammaccare which is to “crush” or “beat” in reference to the main ingredient found in most of our cookies – almond (we list a full line of ingredients for those with food allergies as not all flavors contain nuts). When combined with egg whites, sugar and seasonal flavors, you get the famous cookie you’re used to seeing today. No two flavors are the same just as no two bakeries are the same. The special attention we give to locating the freshest ingredients, the preparation included in our state-of-the-art, automated process and the distribution of our cookies to ensure they taste like you’d expect is why we stand out amongst our warmhearted friends in the baking world.
Although some claim they can trace the cookie’s heritage back to the 1700’s – possibly as early as the 1500’s – the actual creation and unveiling of this delicacy remains a mystery. Some claim Catherine de’Medici’s Italian pastry chefs brought the recipe across country borders when marrying the great Henry II of France; others claim a convent near Cormery in central France is responsible for its introduction. Whatever the true story, most experts agree the 1830’s ushered in the period of the current macaron as we know it today – two almond meringue pastries fused together with delicious, flavored ganache.

Like Chef Jean Philippe, the macaron has gained incredible popularity recently. Although we’ve known of the delicate indulgence for many years and their popularity overseas has been astounding, it isn’t until now that they’ve seriously caught on throughout America. Martha Stewart now features them as a “sweet send-off” for wedding guests while color-themed birthdays can coordinate down to the passion-filled pink of our raspberry or the Spring-fling of our yellow lemon. Grandparents, long-lost friends, significant others – we’ve seen all types of customers appreciate the warm glow and affection of our Parisian pastries.
